Chicken Curry in Dhaba Style


Hi,
Today i am going to show you the recipe for one of my favorite Chicken Curry.
When going over a long drive, sometimes we observe the road side Dhaba's and their preparation of recipes. This is what i observed and made a blend with my style. I hope you will enjoy it.

Ingredients
  1. Chicken - 500 gms
  2. Onion - 3 pcs large size
  3. Ginger - 1 Pc
  4. Garlic - 10-12 flakes
  5. Oil - 7-8 TSP
  6. Tomato - 2 Pcs
  7. Thick Curd -2-3 TSP
  8. Kashmiri Red Chili Powder - 1 TSP
  9. Coriander - 1 TSP
  10. Turmeric Powder - 1 TSP
  11. Garam Masala - 2 TSP
  12. Cumin Powder - 1 TSP
  13. Salt - As per your taste
  14. Kasoori Methi - 1 TSP
  15. Whole Garam Masala (Bay Leaf 1, Cloves - 2-3, Cinnamon - 1 stick, Black cardamom - 2, Green cardamom -2)
  16. Chopped Coriander - 2 TSP

 Preparation Method
  1. Make a fine paste of ginger and garlic.
  2. Puree the tomatoes in a mixer.
  3. Chop all the onions.
  4. Put chicken in a Bowl and sprinkle salt and turmeric powder over it. Marinate it with thick curd, kasoori methi and one tsp of ginger and garlic paste.
  5. Keep it aside for 30 minutes.
  6. Heat 2 tsp of oil in a kadhai. Add all the marinated chicken and cook it over high flame until the chicken becomes dry. Keep it aside.
  7. Heat oil in another kadhai. Add bay leaf, cloves, cinnamon and cardamoms (black and green) to it. Wait for 30 seconds.
  8. Add all the chopped onion. Stir fry on medium flame till well browned.
  9. Add ginger & garlic paste, salt(as per your taste), kashmiri red chilli powder, coriander powder, cumin powder, turmeric powder and garam masala to it.
  10. Stir it for 2-3 minutes. Add pureed tomatoes and 1 tsp coriander leaves to it. cook it until oil separates from masala.
  11. Then add chicken to it and mix it well with the masala and stir it for 2-3 minutes.
  12. Add 1 & 1/2 cup of water. When it starts boiling, cover the kadhai with a lid and cook it over low flame for 5-10 mins until you observe a nice masala gravy.
  13. After the said time remove it from flame.

Your Chicken curry (Dhaba style) is ready.
Serve it hot garnished with chopped coriander.

Stuffed Capsicum


Stuffed Capsicum (Bharwa Shimla Mirch)


Hi there !

Today i am going to show you the step wise method to cook Stuffed Capsicum. As the name suggest, it is basically capsicums stuffed with some interesting ingredients that you will love to cherish on.
We already have heard of recipes related to "Bharwa Karela" (Stuffed Bitter gourd). This recipe is more or less resembles that species.
Let me list out some of the benefits of using capsicum. Capsicums have better source of anti inflammatory properties and can be very helpful in arthritis and anti-aging. Capsicum is beneficial as a daily health supplement.
Another most important ingredient that we are using is Soya Granules. Soya Granules are the richest source of proteins. They have high contents of Vitamin B and fiber. They are also rich in powerful antioxidants.
Now, apart from the nutritional values mentioned above, this recipe can be a favorite among children (due to its colorful appearance) and can also be a part of your lunch box.

Ingredients :

  1. Capsicum - 5-6 Nos
  2. Potato - 3 Nos
  3. Ginger & Garlic Paste - 1 TSP
  4. Onion(Chopped) - 1 Nos
  5. Green Chilli - 1 Nos
  6. Cumin Seeds  - 1/2 TSP
  7. Turmeric Powder - 1/2 TSP
  8. Garam Masala - 1 TSP
  9. Soya Granules - 1/2 Cup
  10. Coriander leaves(Chopped)
  11. Mint leaves(Chopped)
  12. Oil - 3 TSP
  13. Salt - as per your taste

Preparation Method:

  1. Slice off the top of capsicum in such a way that only stem and seeds will be removed.
  2. Keep the empty/hollow capsicum aside.
  3. Boil all potatoes and mash them. 
  4. Soak all soya granules in luke warm water for 10 mins. Strain water from soya granules.
  5. Heat Oil in frying pan. Add Cumin seeds. When it starts flutter, put chopped onion and green chilli into it and fry them till its colour becomes light brown.
  6. Add ginger & garlic paste, turmeric powder, garam masala and salt to it and cook it for one minute.
  7. Add Soya granules to the preparation made above and stir it well for one minute.
  8. Add the mashed potato, chopped coriander and mint leaves to it. Mix it well and stir it for another one minute.
  9. Remove it from flame and keep aside.
  10. With a spoon or your fingers, stuff the capsicums with potato mixture.
  11. Heat 1 tsp oil in another pan and place the stuffed capsicums in it. Saute it for 1-2 mins.
  12. Remove it from flame.
  13. Garnish it with cherry tomato and mint leaves.
  14. Serve it hot with Roti or as side dish.

PS: You can also use cottage cheese/any mix veg/ gram flour in place of potato.
